Why have a food safety management system?

Since 1 January 2006, all food businesses have been required by law to have a written food safety management system in place. Having a food safety management system is not only a legal requirement for all food businesses however. First and foremost, a food safety management system helps ensure your food is safe for customers to eat. This means that having a food safety management system is not only a way of protecting the health of your customers but also the ongoing health of your business.

A food safety management system can help to prevent problems from arising in the first place, rather than reacting to issues once they have actually happened. If the worst happens and your business is taken to court, being able to demonstrate that you have a written food safety management system in place can work in your favour by showing you had taken due diligence to stop an offence being committed.

Implementing a food safety management system - Getting started

The first step in implementing a food safety management system is assigning someone within your organisation responsibility for food safety management. This needs to be someone at a senior level capable of taking on the responsibility for what is a vitally important part of your business. If you are the owner of a food business and involved in the day-to-day running, you may decide to take on this responsibility yourself.

Ideally the person responsible for implementing the food safety management system will have existing knowledge and experience of food safety issues, however if this is not the case relevant knowledge and qualifications can be attained by taking a food safety management course. If you decide to delegate food safety management to another member of staff, it is essential have procedures in place to follow up on his or her performance and document the review process in detail.

What kind of food safety management system do I need?

Different businesses will have different requirements depending on the size and type of business. Large food manufacturers and producers for example will need highly detailed written systems and highly experienced and trained people to put them together. Small caterers and retail outlets will need a less complex food safety management system.

A number of specialist food management system consultants are available in the marketplace, who can give expert advice, guidance and training. Speaking to a specialist or taking a course is advisable even if you have prior experience of food safety management, as specialists in this area will be up to date with legislation and new technology.

A number of introductory booklets and advice leaflets are available from the Food Standards Agency (FSA). If you are small business or start-up, your local business advice centre should be able to provide further information on food safety management, including resources in your area.

Many business advice centres and mentoring services run regular workshops on all aspects of running a business and often advise entrepreneurs to Study Business & Marketing Courses. Studying at home gives the flexibility to study in the evenings at weekends, which is ideal for anyone involved in running a business.
